Our goat cheese sets the standard for food at Celebrity Dairy. I tell people - "if you'r working as hard as we do with the dairy, its stupid to make something mediocre". So our only alternative is to make a really special chevre.
So too with food. A our cheese has evolved through the years, so has our cooking. Fleming started our monthly Sunday dinners over 20 years ago, but when she "promoted" herself out of that job, I inherited the special pleasure of cooking for a group
Those who cherished the food, wine, and service at Bonne Soiree in Chapel Hill, and have lamented Chip Smith and his wife Tina's decision to close their jewel of a restaurant and move to New York will be cheered that they changed their minds. Chip Smith and his wife Tina did move, but reconsidered, and by a fluke of fortune will be joining us in residence as "Artists in Residence" here at the Inn. This year begins a new adventure. Having worked at The Inn at Little Washington, they won't find our country enviroment an entirely a new experience,. but having an escaped goat at the kitchen door, or munching happily (for the goat) in the flower garden might take some adjustment.
The details are not settled yet, but they're settling in now, and planning cooking debut for Valentine's Day weekend. Stay tuned.
